Spiced Christmas Cupcake Ingredients
Makes 24 cupcakes
Cupcakes:
- 8oz caster sugar
- 8oz unsalted butter/margarine
- 12oz self-raising flour
- 2 tsp Cinnamon plus extra for dusting
- 2 tsp Ginger
- 2 tsp nutmeg
- 4 medium eggs
Icing:
- 250g unsalted butter
- 500g icing sugar
- Cool boiled water
- 2 tsp vanilla extract/essence
Instructions
Cake:

Put all of the ingredients into a mixer (or bowl and beat with a handheld mixer) and beat together until smooth and creamy. (Approx 5 minutes).

Spoon into paper/foil cases halfway.

Bake in the oven at 150 on the middle shelf for 20 minutes.

When the cupcakes have risen nicely and are springy to the touch remove from oven and leave to cool in the tin ready for decorating.
Icing:
- Beat the butter and icing sugar with 100ml of water in a mixer on low to start moving up to high when the ingredients are combined.
- Keep beating until the butter icing resembles whipped cream. Add more water tablespoon at a time if needed until it is fluffy and soft.
- Spoon into a piping bag with an open star nozzle and pipe big swirls of icing on top of each cooled cupcake.
- Dust with cinnamon and gold glitter.
