  • 2 tsp Ginger
  • 2 tsp nutmeg
  • 4 medium eggs

  • 250g unsalted butter
  • 500g icing sugar
  • Cool boiled water
  • 2 tsp vanilla extract/essence

  2. Spoon into paper/foil cases halfway.
  3. Bake in the oven at 150 on the middle shelf for 20 minutes.
  4. When the cupcakes have risen nicely and are springy to the touch remove from oven and leave to cool in the tin ready for decorating.
